Serves 3 - 4

 

1tbsp olive oil

1 onion, chopped

1 garlic clove, peeled and crushed

25g/1oz butter

6 Streaky bacon style strips, defrosted and chopped into stamp-sized pieces

350g/12oz spaghetti

3 medium free range egg yolks

75g/3oz parmesan cheese, very finely grated

15ml/1tbsp chopped parsley

salt and pepper

 

Cook the spaghetti in boiling salted water until just

tender, then drain and rinse.

Meanwhile, heat the oil in a large pan and fry the

onion and garlic until soft but not browned. 

Add the butter and bacon and cook for a few more

minutes. 

Beat the egg yolks with the cheese and parsley in a bowl and season to taste.

Add the bacon to the egg mixture. Add the spaghetti.

Stir and serve.
