Serves 2-3

 

2tbsp olive oil

1 onion, finely chopped

1 clove garlic, crushed

14oz/400g can chopped tomatoes

1tbsp tomato puree

3tbsp chopped fresh parsley

6 vegetarian sausages, defrosted if frozen

½ tsp sugar

pinch of salt and black pepper

450g fresh tagliatelle or 225g dried

 

Cook pasta until al dente in boiling salted water.

Fry onion until soft. Add garlic and sausages and cook for further 3-5 minutes.

Stir in chopped tomatoes, tomato puree, sugar, salt, pepper and chopped parsley.

Simmer for 15 minutes until sauce has thickened.

Add pasta to sauce and serve.
