Serves 2-3

 

300g quorn mince

2tbsp olive oil

1 red onion, chopped

1 clove garlic, peeled and crushed

300ml vegetable stock

400g can chopped tomatoes

1½tbsp tomato puree

2tsp mixed herbs

350g spaghetti

 

 

Cook spaghetti in a pan of salted boiling water.

Meanwhile, heat oil in a large pan. Fry onion and garlic until soft.

Add quorn mince and vegetable stock. Stir well to so that the quorn absorbs most of the stock.

Add chopped tomatoes and tomato puree and stir.

Sprinkle over mixed herbs and allow to simmer for about 10 minutes.

Place spaghetti around the edge of the plate and serve the quorn mixture inside it.
