6 vegetarian sausages, defrosted if bought frozen

6 roast potatoes, sliced

350g leeks

1tbsp creamed horseradish sauce

100g cheddar cheese, grated

1tbsp olive oil

 

Serves 2-3

 

Heat the oil in a pan and begin to fry the sausages.

Chop the leeks and add to the pan. Cook until soft and slightly browned.

Add the potatoes and the horseradish sauce and heat through thoroughly.

Take off the heat and sprinkle the cheese over the top.
