Serves 4 at 2 wraps per person

1tbsp olive oil

300g pack quorn mince

300ml vegetable stock

2tbsp ‘red’ Bisto granules (it is vegetarian)

1 onion, chopped

2tsp mild chilli powder

1tsp ground cumin

400g can chopped tomatoes

420g can red kidney beans, drained

8 flour tortillas

shredded lettuce

grated cheese

 

Heat oil in a pan and cook onions until they start to brown.

Add quorn mince and stock.

Add chilli powder and cumin and stir well.

Then add beans, tomatoes, tomato puree and Bisto. Stir and simmer for about 15 minutes, continuing to stir occasionally.

Place cheese and lettuce in separate bowls on the table.

Heat tortillas according to packet instructions.

Place bowl of mince and plate of tortillas on table so that everyone can help themselves.
