Serves 4
4 free range eggs
2 little gem lettuces
12 cherry tomatoes, halved
8 ‘streaky strips’
4tbsp olive oil
2tbsp white wine vinegar
2tsp wholegrain mustard
Salt and black pepper
2 slices wholemeal bread
Hard boil the eggs for 12 minutes. Cool in cold water. Remove the shells and cut into quarters.
Dry fry the streaky strips and set aside
Wash and spin the lettuce leaves and arrange on a plate with the cherry tomatoes. Place the eggs and bacon on top.
Combine the olive oil, vinegar and mustard. Season and whisk gently then drizzle over the salad.
Toast the bread. Cut into small pieces and sprinkle over the top.
